- In a large mixing bowl, combine the ground turkey, red onion, garlic, parsley, basil, Dijon mustard, beaten egg, breadcrumbs, Worcestershire sauce, smoked paprika, sea salt, and black pepper. Gently mix with your hands until just combined – be careful not to overmix, as this can make the burgers tough.
- Divide the mixture into 4 equal portions. Gently shape each portion into a patty about ¾-inch thick. Use your thumb to make a slight indentation in the center of each patty – this helps them cook evenly and prevents them from puffing up.
- Heat olive oil in a large skillet over medium heat. Alternatively, you can use your outdoor grill for that classic charred flavor. Cook the patties for 5-6 minutes per side, or until they reach an internal temperature of 165°F. For perfectly juicy results, avoid pressing down on the patties while cooking.
- Toast the brioche buns lightly. Place each cooked patty on the bottom bun and add your favorite toppings. Serve immediately while hot and juicy.
Notes
Chill the turkey mixture for 15-20 minutes before forming patties to help them hold their shape better during cooking. Don't overmix the meat mixture. Use a meat thermometer to ensure burgers reach 165°F internally. Let cooked burgers rest for 2-3 minutes before assembling to allow juices to redistribute.
