  • 8 slices of white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon butter, softened (optional, for spreading on bread)

  1. In a small bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  2. Using a sharp knife or a mandoline slicer, thinly slice the cucumber. Aim for slices that are about 1/8-inch thick.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter one side of each slice. Spread a generous layer of the herb cream cheese mixture onto the unbuttered side of each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  4. Place the assembled sandwiches in the refrigerator for about 30 minutes to allow the flavors to meld together. When ready to serve, trim off the crusts (if desired) and cut each sandwich into quarters or halves for elegant finger sandwiches.

Notes

Choose soft, fresh bread and drain cucumber slices to prevent sogginess. For added flavor, consider adding hummus or avocado spread. Best served fresh or stored in an airtight container for up to 2 hours.
