  • 2 tbsp fresh dill, chopped

  1. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until smooth and well combined.
  2. Using a sharp knife or mandoline, thinly slice the cucumber into even rounds. For extra crispiness, lightly salt the cucumber slices and let them sit for 10 minutes, then pat them dry with a paper towel.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter each slice to add a rich flavor. Spread a generous layer of the cream cheese mixture onto each slice of bread. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread to form sandwiches.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches for a more elegant look. Cut each sandwich into quarters or smaller triangles for dainty tea sandwiches. Arrange them on a platter and serve immediately.

Notes

Choose soft bread like white or whole wheat for best results. Assemble sandwiches just before serving to prevent sogginess. Fresh herbs like mint or chives can be added to the cream cheese spread for extra flavor.
