  • 8 slices of white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional)

Method

  1. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. Lightly butter each slice if desired. Spread a generous layer of the cream cheese mixture onto each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread to form sandwiches.
  4. Using a sharp knife, carefully cut off the crusts of the sandwiches. Cut each sandwich into smaller rectangles or triangles for easy serving. Arrange them on a platter and garnish with additional dill or cucumber slices if desired.

Notes

Choose soft, fresh bread for easy biting. Assemble sandwiches just before serving to prevent sogginess. For a unique flavor, add mint or basil leaves. Best served chilled.
