  • 8 slices soft white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp unsalted butter, softened (optional, for spreading)

Method

  1. In a small bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well blended.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber into even rounds. Pat the slices dry with a paper towel to remove excess moisture.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter one side of each slice. Spread a generous layer of the cream cheese mixture onto the unbuttered side of each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  4. For a polished look, trim the crusts off the sandwiches using a sharp knife. Cut each sandwich into smaller rectangles, triangles, or fingers, depending on your preference. Arrange them on a platter and serve immediately, or cover with a damp cloth and refrigerate until ready to serve.

Notes

Choose soft white or whole wheat bread for best results. To prevent sogginess, assemble sandwiches no more than an hour before serving. For a variation, add thinly sliced radishes or smoked paprika to the cream cheese spread.
