Ingredients

Ingredients
  • 4 large ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1 baguette or Italian bread, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil for brushing

Method

Instructions
  1. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, extra-virgin olive oil, and balsamic vinegar. Stir gently to mix well. Season with salt and freshly ground black pepper to taste. Let the mixture sit for about 10 minutes to allow the flavors to meld together.
  2. Preheat your oven to 375°F (190°C). Place the sliced baguette or Italian bread on a baking sheet. Lightly brush each slice with olive oil. Toast in the oven for about 5-7 minutes or until the edges are golden and crisp.
  3. Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon the tomato mixture generously onto each slice of bread. Garnish with additional fresh basil leaves if desired.
  4. Serve the bruschetta immediately while the bread is still crispy. Arrange the slices on a platter and serve as an appetizer or light snack.

Notes

Choose ripe tomatoes for the best flavor. Drain excess liquid from the tomato mixture to prevent soggy bread. You can add grated Parmesan or feta cheese for extra richness. Toast the bread just before serving to maintain crispiness.
