- Prepare the watermelon puree. In a blender, combine the cubed watermelon and blend until smooth. Strain through a fine-mesh sieve to remove any pulp, if desired.
- Make the simple syrup. In a small saucepan, combine 1/2 cup water with the sugar. Heat over medium heat, stirring constantly until the sugar completely dissolves. Remove from heat and let cool completely.
- Muddle the mint. In a large pitcher, add the fresh mint leaves and gently muddle them to release their essential oils and flavor.
- Combine all ingredients. Add the watermelon puree, freshly squeezed lemon juice, cooled simple syrup, and remaining cold water to the pitcher with the mint. Stir well to combine.
- Chill and serve. Refrigerate for at least 30 minutes to allow the flavors to meld. Serve over ice with fresh mint sprigs, lemon slices, or watermelon wedges for garnish.
Notes
For the best results, use ripe, sweet watermelon at room temperature for maximum flavor extraction. The mint flavor will intensify the longer the lemonade sits, so if you prefer a milder mint taste, remove the mint leaves after 30 minutes of chilling.
