  • 1 small onion, diced
  • 1/2 cup sun-dried tomatoes in oil, sliced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil for garnish

  1. Pat salmon fillets dry and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  2. Sear salmon fillets for 4-5 minutes per side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add onion and garlic. Sauté for 2 minutes until fragrant.
  4. Add sun-dried tomatoes and cook for another minute, then stir in fresh spinach until wilted.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes if using.
  6. Return salmon fillets to the skillet and spoon sauce over them. Simmer for 3-4 minutes until salmon is cooked through.
  7. Garnish with fresh basil and serve immediately.

Notes

Always pat salmon dry before seasoning to ensure perfect searing. Use sun-dried tomatoes packed in oil for maximum flavor. Don't overcook the salmon – it should be flaky but still moist. For a lighter version, substitute half-and-half for heavy cream.
