  • 2 tablespoons buttermilk (or milk with 1/2 teaspoon lemon juice)

  1. Prepare the zucchini by cutting them into uniform fry-shaped sticks, about 1/2-inch thick. Pat them dry with paper towels to remove excess moisture - this is key for achieving maximum crispiness!
  2. Set up your breading station with three shallow bowls. In the first bowl, place the flour. In the second, beat the eggs. In the third, combine panko breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, paprika, and black pepper.
  3. Dip each zucchini stick first in flour, then in the egg mixture, and finally coat thoroughly with the panko-parmesan mixture. Press gently to ensure the coating adheres well.
  4. Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't overlap. Lightly spray with cooking oil.
  5. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. You may need to work in batches depending on your air fryer size.
