- Preheat air fryer to 400°F (200°C) for about 3 minutes
- Cut zucchinis into uniform fry-shaped sticks (1/2-inch thick, 3-4 inches long) and pat completely dry with paper towels
- Set up breading station with three shallow bowls: flour, beaten eggs, and breadcrumb mixture (panko, Parmesan, garlic powder, paprika, onion powder, pepper, and salt)
- Dredge each zucchini stick in flour, then dip in eggs, then coat thoroughly in breadcrumb mixture, pressing gently to adhere
- Arrange coated zucchini fries in single layer in air fryer basket without overlapping, spray lightly with cooking spray or olive oil
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy
- Serve immediately while hot and crispy with your favorite dipping sauce
Notes
For extra crispy results, ensure zucchini sticks are completely dry before breading. Don't overcrowd the air fryer basket - cook in batches if necessary. Experiment with different seasonings like Italian seasoning or cayenne pepper for flavor variations.
