- Prepare the zucchini by washing and cutting into 1/2-inch thick sticks, similar to traditional fry shape. Pat them completely dry with paper towels—this is crucial for maximum crispiness.
- Set up your breading station with three shallow bowls. In the first bowl, whisk together the flour with a pinch of salt and pepper. In the second bowl, pour the plant-based milk. In the third bowl, combine panko breadcrumbs, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Dredge each zucchini stick first in the flour mixture, shaking off excess. Then dip into the plant-based milk, allowing excess to drip off. Finally, coat thoroughly in the breadcrumb mixture, pressing gently to adhere.
- Preheat your air fryer to 400°F (200°C) for 3 minutes. Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't touch. Lightly spray with avocado oil.
