  1. Preheat the oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Thinly slice the zucchinis and place them in a large bowl. Drizzle with olive oil and toss to coat evenly.
  3. In a separate bowl, combine the shredded cheddar cheese, grated Parmesan cheese, sour cream, minced garlic, oregano, basil, salt, and pepper. Mix well.
  4. Arrange a layer of zucchini slices in the prepared baking dish. Spread a portion of the cheese mixture over the zucchini. Repeat the layers until all the zucchini and cheese mixture are used, ending with a layer of cheese on top.
  5. Sprinkle the breadcrumbs evenly over the top layer of cheese.
  6. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the zucchini is tender.
