- Preheat the oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
- Thinly slice the zucchinis and place them in a large bowl. Drizzle with olive oil and toss to coat evenly.
- In a separate bowl, combine the shredded cheddar cheese, grated Parmesan cheese, sour cream, minced garlic, oregano, basil, salt, and pepper. Mix well.
- Arrange a layer of zucchini slices in the prepared baking dish. Spread a portion of the cheese mixture over the zucchini. Repeat the layers until all the zucchini and cheese mixture are used, ending with a layer of cheese on top.
- Sprinkle the breadcrumbs evenly over the top layer of cheese.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the zucchini is tender.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
For the best texture and flavor, use fresh, firm zucchinis. For extra crunch, mix some crushed crackers or nuts into the breadcrumb topping. You can assemble this dish ahead of time and refrigerate it until you're ready to bake. Just add a few extra minutes to the baking time if it's going into the oven cold. Feel free to experiment with different types of cheese, such as mozzarella or Swiss, for a unique twist.
