Ingredients

Ingredients
  • 1 sheet puff pastry, thawed
  • 2 cups mixed cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh basil, chopped
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Method

Instructions
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet.
  3. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the puff pastry, leaving a 1-inch border around the edges.
  4. Arrange the halved cherry tomatoes on top of the cheese. Drizzle with olive oil and sprinkle with thyme, basil, salt, and pepper.
  5. Gently fold the edges of the puff pastry inward to create a rustic tart shape. Brush the edges with the beaten egg for a golden finish.
  6. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
  7. Allow the tart to cool slightly before slicing. Serve warm or at room temperature.

Notes

Use fresh herbs like thyme and basil for added flavor. Customize the cheese with goat cheese or feta for a tangier taste. A balsamic glaze or honey drizzle can elevate the flavors. The tart can be prepared ahead of time and reheated before serving.
