- Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the rinsed rice to the saucepan and stir to coat with the oil and aromatics. Toast the rice for 2 minutes, stirring constantly.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed and rice is tender.
- Remove from heat and let stand covered for 5 minutes. Fluff the rice with a fork, then stir in the lemon juice, lemon zest, oregano, thyme, parsley, and dill.
- Season with salt and pepper to taste. Serve warm as a perfect complement to your main course.
Notes
For the brightest lemon flavor, use freshly squeezed lemon juice rather than bottled. Add fresh herbs just before serving to maintain their vibrant color and flavor. Pairs beautifully with grilled chicken, fish, or lamb.
