- Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Season the chicken breasts with salt, pepper, oregano, and basil. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil. Sauté the sliced zucchini for 3-4 minutes until slightly tender. Add the minced garlic and cook for another minute until fragrant.
- Place the seared chicken breasts in the prepared baking dish. Arrange the sautéed zucchini and garlic around the chicken. Pour the vegetable broth over the chicken and zucchini.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the chicken and zucchini.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
Use fresh zucchini and garlic for the best flavor. Customize the cheese blend or add other vegetables like bell peppers or mushrooms for extra nutrition. Prepare ahead of time and refrigerate until ready to bake for convenience.
