- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or non-stick spray.
- Wash and thinly slice the zucchinis. Place them in a colander, sprinkle with salt, and let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
- In a large bowl, combine the shredded cheddar, mozzarella, Parmesan, sour cream, minced garlic, oregano, basil, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Arrange a layer of zucchini slices in the prepared baking dish. Spread half of the cheese mixture over the zucchini. Repeat with another layer of zucchini and the remaining cheese mixture. Sprinkle breadcrumbs evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly. Let it cool for a few minutes before serving.
Notes
Use fresh zucchini for best results. For extra texture, mix breadcrumbs with melted butter before sprinkling on top. The casserole can be assembled ahead of time and refrigerated until ready to bake.
