  1. Prepare the vegetables by finely shredding both green and red cabbage using a sharp knife or mandoline slicer, julienning carrots into matchstick-sized pieces, thinly slicing red onion, and chopping fresh parsley.
  2. Make the creamy dressing by whisking together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, celery seeds, and garlic powder until smooth and well combined, then season with salt and pepper to taste.
  3. Combine all prepared vegetables in a large mixing bowl, pour the dressing over them, and toss gently until evenly coated, then refrigerate for at least 30 minutes to allow flavors to meld.
  4. Before serving, give the coleslaw a final toss and adjust seasoning if needed for perfect crisp, creamy texture.

Notes
