- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, cinnamon, nutmeg, ginger, salt, and baking powder. Mix well to distribute the spices evenly.
- In a separate bowl, whisk together the applesauce, maple syrup, egg, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated carrots and optional add-ins like raisins or walnuts.
- Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each cookie with the back of a spoon to about ½-inch thickness.
- Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use freshly grated carrots for the best texture and moisture. Old-fashioned rolled oats work best for texture. Taste the dough before baking and adjust sweetness as needed. Store cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
