  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, cinnamon, nutmeg, ginger, salt, and baking powder. Mix well to distribute the spices evenly.
  3. In a separate bowl, whisk together the applesauce, maple syrup, egg, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated carrots and optional add-ins like raisins or walnuts.
  5. Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Gently flatten each cookie with the back of a spoon to about ½-inch thickness.
  7. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
