  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 2-3 heirloom tomatoes, sliced
  • Fresh basil leaves
  • 1 tablespoon olive oil
  • 1 clove garlic, minced

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet and prick it all over with a fork to prevent it from puffing up too much during baking.
  3. In a bowl, mix together the ricotta cheese, grated Parmesan cheese, egg, salt, and pepper until smooth and well combined.
  4. Spread the ricotta mixture evenly over the puff pastry, leaving a small border around the edges. Arrange the sliced heirloom tomatoes on top of the ricotta mixture. Drizzle with olive oil and sprinkle with minced garlic.
  5. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and the ricotta filling is set.
  6. Remove the tart from the oven and let it cool slightly. Garnish with fresh basil leaves before slicing and serving.

Notes

Choose ripe tomatoes for the best flavor. Customize the cheese or add breadcrumbs for extra texture. Serve warm or at room temperature.
