Ingredients

Ingredients
  • 8 ounces cream cheese, softened
  • 1 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 4 cups fresh peaches, sliced
  • 2 cups strawberries, hulled and quartered
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/2 cup graham cracker crumbs
  • 1/4 cup chopped pecans or almonds
  • Fresh mint leaves for garnish (optional)

Method

Instructions
  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until well combined and the dressing is smooth and lump-free.
  2. Wash and prepare all the fruit. Slice the peaches into bite-sized pieces, hull and quarter the strawberries, and ensure the blueberries and raspberries are clean and dry.
  3. Gently fold the prepared fruit into the creamy dressing mixture. Be careful not to overmix to keep the fruit intact. The goal is to coat the fruit evenly without crushing it.
  4. Sprinkle the graham cracker crumbs and chopped nuts over the top of the salad. This adds that classic 'cobbler' texture and crunch that makes this dessert so special.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Garnish with fresh mint leaves before serving if desired.

Notes

For best texture, use ripe but firm peaches that will hold their shape when mixed. Make this salad up to 4 hours ahead - the flavors improve as it chills. For a tropical twist, add diced pineapple or mango to the fruit mix.
