- Prepare the vegetables: Finely shred the cabbage using a sharp knife or mandoline slicer. Combine the cabbage with shredded carrots and minced onion in a large mixing bowl.
- Make the dressing: In a separate medium bowl, whisk together mayonnaise, buttermilk, sugar, vinegar, lemon juice, salt, pepper, and celery seed until smooth and well combined. The sugar should be completely dissolved.
- Combine and chill: Pour the dressing over the cabbage mixture and toss thoroughly to coat every strand. Cover and refrigerate for at least 2 hours (preferably 4-6 hours) to allow the flavors to meld and the cabbage to soften slightly.
- Serve and enjoy: Before serving, give the coleslaw a good stir. Taste and adjust seasoning if needed. Serve chilled.
Notes
For authentic KFC texture, aim for thin, delicate cabbage shreds. Don't skip chilling time for flavor development. Buttermilk substitute: mix 1/4 cup milk with 3/4 tsp lemon juice. This coleslaw keeps well for up to 3-4 days refrigerated.
