- Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside.
- In the same skillet, add diced onion and bell pepper. Cook until softened, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant.
- Add rice to the skillet and stir to coat with the oil and vegetables. Toast the rice for 2 minutes until slightly golden.
- Pour in broth, honey, Cajun seasoning, and smoked paprika. Stir well to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is cooked and liquid is absorbed.
- Return the cooked sausage to the skillet and stir to combine. Cook for another 2-3 minutes to heat through. Garnish with sliced green onions before serving.
Notes
Use long-grain rice for best texture, adjust Cajun seasoning for spice preference, use quality broth for depth of flavor, don't lift lid while rice cooks, can add cream or coconut milk for richer sauce.
