Instructions
- Preheat your oven to 400°F (200°C). While the oven heats, prepare the chicken breasts by pounding them to an even thickness of about 1/2 inch. This ensures even cooking.
- In a shallow dish, combine the breadcrumbs, grated parmesan cheese, and Italian seasoning. In another dish, place the beaten egg.
- Season the chicken breasts with salt and pepper. Dip each breast first in the egg mixture, then coat thoroughly with the breadcrumb mixture.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the coated chicken breasts and cook for 3-4 minutes per side until golden brown.
- Pour marinara sauce around the chicken in the skillet, then top each breast with shredded mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from oven, garnish with fresh basil, and serve immediately over pasta or with crusty bread.
Notes
Pound chicken to even thickness for consistent cooking; use freshly grated cheeses for better melting; let chicken rest 5 minutes before serving for juicier results
