  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents clumping.
  2. Heat olive oil in a medium saucepan over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the rinsed rice and cook for 2 minutes, stirring constantly to coat the grains with oil.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed and rice is tender.
  6. Remove from heat and let stand covered for 5 minutes. Then fluff with a fork.
  7. Stir in lemon zest, lemon juice, fresh dill, parsley, oregano, salt, and pepper. Mix well to combine.
  8. Garnish with additional fresh herbs and lemon slices before serving.
