Ingredients

Ingredients
  • 2 cups cubed dragon fruit (pink or white)
  • 2 cups diced ripe mango
  • 1 cup fresh strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup pineapple chunks
  • 1 kiwi, peeled and sliced
  • 1 tablespoon fresh mint leaves, chopped
  • 2 tablespoons fresh lime juice
  • 3 tablespoons pure maple syrup
  • 1 teaspoon grated orange zest
  • Pinch of sea salt

Method

Instructions
  1. Prepare the fruits: Wash all fruits thoroughly. Cube the dragon fruit, dice the mango, hull and halve strawberries, and slice the kiwi. Place all prepared fruits in a large mixing bowl.
  2. Make the dressing: In a small bowl, whisk together maple syrup, fresh lime juice, orange zest, and a pinch of sea salt until well combined.
  3. Combine and toss: Pour the dressing over the mixed fruits and gently toss to coat all pieces evenly. Be careful not to crush the softer berries.
  4. Add fresh herbs: Sprinkle chopped mint leaves over the fruit salad and give it one final gentle toss.
  5. Chill and serve: For best flavor, refrigerate for 15-20 minutes before serving to allow the flavors to meld together.

Notes

Choose ripe but firm fruits for best texture. Add dressing just before serving to prevent fruits from becoming too soft. For extra crunch, add toasted coconut flakes or chopped nuts. Perfect for meal prep - keep dressing separate until ready to serve.
