  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish
  • Optional: avocado slices, hot sauce, or cheese

  1. Prep Your Sweet Potatoes - Peel and cube sweet potatoes into 1/2-inch pieces, then pat them dry
  2. Cook the Vegetables - Heat olive oil in a large skillet over medium heat, sauté onion and bell pepper for 3-4 minutes until softened, then add garlic and cook for 1 minute until fragrant
  3. Add Sweet Potatoes - Add cubed sweet potatoes, paprika, cumin, salt, and pepper to skillet, cook for 10-12 minutes stirring occasionally until sweet potatoes are tender and golden
  4. Create Egg Wells - Use a spoon to create 4 wells in the sweet potato mixture, crack one egg into each well, cover skillet and cook for 5-7 minutes until eggs reach desired doneness
  5. Serve and Enjoy - Garnish with fresh herbs and serve immediately with optional avocado slices or hot sauce

Notes

Cut sweet potatoes uniformly for even cooking, don't overcrowd the skillet, cook eggs 5 minutes for runny yolks or 7-8 minutes for firm yolks, prep vegetables the night before for quicker assembly, customize with spinach, mushrooms or other vegetables
