- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes with hand mixer or 3-4 minutes by hand).
- Beat in the egg and vanilla extract until well combined and smooth.
- In a separate small bowl, whisk together the flour, baking soda, and salt, then gradually add to wet ingredients, mixing just until combined.
- Stir in the oats and any optional add-ins like raisins or chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until edges are golden brown but centers still look slightly underdone.
- Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
Notes
Don't overbake - cookies continue cooking on hot baking sheet. Use room temperature ingredients for better texture. Cookies freeze beautifully for up to 3 months.
