- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually blend in the flour mixture until just combined.
- Fold in chocolate chips and walnuts (if using).
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 9-11 minutes, or until edges are golden brown and centers are still soft.
- Let cookies cool on baking sheet for 5 minutes before transferring to wire racks to cool completely.
Notes
Use room temperature butter for optimal creaming. The cinnamon adds warmth reminiscent of cinnamon rolls. Don't overmix after adding flour. Chill dough for 30 minutes before baking for thicker, bakery-style cookies.
