- Wash and thoroughly dry the green beans. Trim the ends and cut any particularly long beans in half for even cooking.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the green beans and stir-fry for 5-6 minutes until they become bright green and develop some charred spots.
- Reduce heat to medium and add sesame oil, soy sauce, and rice vinegar. Toss continuously for 2-3 minutes until the beans are coated evenly and the sauce has reduced slightly.
- Remove from heat and sprinkle with toasted sesame seeds. Toss once more to distribute the seeds evenly throughout the dish.
- Serve immediately while hot. The beans should be crisp-tender with a beautiful glossy coating and nutty aroma.
Notes
For best results, make sure skillet is properly heated before adding green beans. Toast your own sesame seeds for enhanced flavor. Can use frozen green beans without thawing - just add extra cooking time.
