  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

  1. Cook the penne pasta according to package directions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper, then cook until golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Reduce heat to medium and add cream cheese, stirring until melted and smooth. Gradually whisk in chicken broth until smooth. Add ranch seasoning, sour cream, and both cheeses, stirring continuously until the sauce is creamy and well-combined.
  5. Return the cooked chicken to the skillet along with the cooked pasta. Stir gently to coat everything in the sauce, adding pasta water if needed to reach desired consistency. Garnish with fresh parsley and serve immediately.

Notes

For creamiest results, ensure cream cheese is fully softened. Reserve pasta water for silkier sauce. Can use pre-cooked chicken for quicker preparation.
