- Prepare the vegetables and fruits. Wash and dry the cucumbers and strawberries thoroughly. Slice the cucumbers into thin rounds using a sharp knife or mandoline. Hull the strawberries and slice them into uniform pieces.
- Combine the base ingredients. In a large mixing bowl, gently toss together the sliced cucumbers, strawberries, and red onion. Be careful not to crush the delicate strawberries during mixing.
- Make the dressing. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined. The dressing should emulsify slightly and have a balanced sweet-tangy flavor.
- Assemble the salad. Pour the dressing over the cucumber-strawberry mixture and toss gently to coat all ingredients evenly. Add the fresh mint and basil, then toss once more.
- Serve immediately or chill. For best flavor, let the salad sit for 5-10 minutes before serving to allow the flavors to meld. If using feta cheese, sprinkle it over the top just before serving.
Notes
Choose English or Persian cucumbers for best results. Salad is best served within 2 hours of preparation. For make-ahead, keep dressing separate and combine just before serving. Can be customized with nuts or additional fruits.
