Ingredients

Ingredients
  • 1 pound fresh green beans, trimmed
  • 8 ounces cremini mushrooms, sliced
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon soy sauce (or tamari)
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Method

Instructions
  1. Wash and trim the green beans, then pat them dry. Slice the mushrooms into even pieces.
  2. Heat olive oil in a large skillet over medium-high heat. Add green beans and sauté for 5-6 minutes until they start to soften and develop some color.
  3. Add mushrooms to the skillet and continue cooking for another 4-5 minutes, stirring occasionally, until mushrooms are golden brown and green beans are tender-crisp.
  4. Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic and cook for 1-2 minutes until fragrant.
  5. Stir in soy sauce, lemon juice, salt, and pepper. Toss everything together to coat evenly.
  6. Remove from heat and garnish with fresh parsley. Serve immediately while hot.

Notes

For extra crisp-tender beans, blanch them in boiling water for 2 minutes before sautéing, then plunge into ice water to stop cooking. Try using different mushroom types like shiitake or portobello for varied texture and flavor. Add a splash of cream or milk at the end for a richer sauce.
