- Wash and trim the green beans, then pat them dry. Slice the mushrooms into even pieces.
- Heat olive oil in a large skillet over medium-high heat. Add green beans and sauté for 5-6 minutes until they start to soften and develop some color.
- Add mushrooms to the skillet and continue cooking for another 4-5 minutes, stirring occasionally, until mushrooms are golden brown and green beans are tender-crisp.
- Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic and cook for 1-2 minutes until fragrant.
- Stir in soy sauce, lemon juice, salt, and pepper. Toss everything together to coat evenly.
- Remove from heat and garnish with fresh parsley. Serve immediately while hot.
Notes
For extra crisp-tender beans, blanch them in boiling water for 2 minutes before sautéing, then plunge into ice water to stop cooking. Try using different mushroom types like shiitake or portobello for varied texture and flavor. Add a splash of cream or milk at the end for a richer sauce.
