  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish

  1. Preheat oven to 400°F (200°C). Cut potatoes into 1-inch cubes and pat dry with paper towels. Mince all garlic cloves and set aside.
  2. In a large bowl, toss cubed potatoes with 2 tablespoons olive oil, minced garlic, thyme, rosemary, salt, and pepper. Spread evenly on a large baking sheet, leaving space for chicken.
  3. In a shallow dish, combine grated parmesan cheese, breadcrumbs, minced garlic, oregano, smoked paprika, salt, and pepper to create the coating.
  4. Pat chicken dry and lightly brush with olive oil. Press each piece firmly into the parmesan mixture, coating all sides evenly. Place coated chicken among potatoes on baking sheet.
  5. Bake for 35-40 minutes, until chicken reaches 165°F internal temperature and potatoes are golden brown and tender. Broil for last 2-3 minutes for extra crispiness.
  6. Garnish with fresh parsley and serve hot.
