- Season the chicken breasts evenly with chili powder, cumin, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side, until golden brown and cooked through.
- While the chicken is cooking, prepare the cheese sauce by combining Monterey Jack cheese, cheddar cheese, heavy cream, and diced green chilies in a saucepan over low heat. Stir until smooth and creamy.
- Pour the cheese sauce over the cooked chicken in the skillet. Simmer for 2-3 minutes to allow flavors to meld.
- Finish with fresh lime juice and chopped cilantro before serving.
Notes
For extra tender chicken, marinate in the spices for 30 minutes before cooking. Adjust spice level by increasing/decreasing cayenne pepper. Serve over rice or with tortillas. Leftovers make excellent taco or quesadilla filling.
