  • 8 oz firm tofu, cubed
  • 2 green onions, chopped (for garnish)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup vegetable broth
  • 1/2 teaspoon red pepper flakes (optional)

  1. Prepare Ingredients: Slice all vegetables and drain the tofu. Pat the tofu dry with paper towels to ensure it gets crispy when cooked. Mix the sauce ingredients in a small bowl and set aside.
  2. Cook Aromatics: Heat olive oil in a large wok or skillet over medium-high heat. Add onion and cook for 2-3 minutes until softened. Add garlic and ginger, stirring constantly for 30 seconds until fragrant.
  3. Add Vegetables: Add cabbage, bell pepper, and carrots to the pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp. The cabbage should be slightly wilted but still have some crunch.
  4. Incorporate Protein: Add chickpeas and cubed tofu to the pan. Cook for another 3-4 minutes, stirring gently to avoid breaking the tofu.
  5. Add Sauce and Finish: Pour the sauce mixture over the stir-fry and stir well to coat everything evenly. Cook for 2-3 minutes until the sauce thickens slightly. Garnish with green onions and serve immediately.

Notes

Use high heat for stir-frying, prep everything first before cooking, don't overcrowd the pan, and customize vegetables as desired. Add extra red pepper flakes for spiciness.
